‘Casa Perbellini’

Casa Perbellini is an extraordinary challenge. A challenge that multiple-starred chef Giancarlo Perbellini strongly wanted to take on with his new restaurant in the heart of the oldest part of Verona, in Piazza San Zeno. It is a place where the cook reclaims his natural stage: the kitchen. Barriers vanish and the chef and his work remain at the center in a spectacular open kitchen where guests can admire the art of preparing dishes. All this in an intimate atmosphere with a small number of tables seating around 24 and a unique relationship between the cook and the public.

The two stars from Michelin, who named him one of the most renowned chefs in Italy, are apparent in all his work, where innovation and tradition are combined in the choice of dishes. Childhood friends who grew up together in the Oltrarno, nurturing a passion for good food through their teenage years, owners Marco and Martina Baldesi and Stefano Sebastiani (all of which have full-time jobs!) serve Mediterranean-inspired, locally-sourced and seasonal menus that change every three months.

Their cellar boasts over 200 different wines, mostly from Tuscany and the rest from Italy, but also from France. When the owners opened the eatery 14 years ago, they asked a group of their friends to help clean the storefront, paint the walls and turn the grimy interior into a real restaurant. It has maintained the same simple yet elegant decor since its beginnings, made up of dark wood tables and paper placemats.

Since the opening in 1757, the restaurant Del Cambio has been the legendary address for beauty and food lovers. Today the mesmerizing decoration and furnishing from the XIXth century have been brought back to the original splendor by an accurate restoration.

Meanwhile, the works by Martino Gamper, Michelangelo Pistoletto, Izhar Patkin, Pablo Bronstein and Arturo Herrera are engaged in an elegant conversation with the past. A young talented chef heads the kitchen, Matteo Baronetto, who bravely and respectfully interprets the mainstay courses of the Piedmontese tradition.The regional excellencies meet unusual and unexpected ingredients in the name of equilibrium. The wines chart is wide and of the highest level and is led by the Piedmontese labels with some connoisseur’s awless pearls.
